No Mayo Spicy Chicken Salad Recipe

Chicken salad is one of my favorite go-to lunches.  It's easy and filling without stuffing yourself with carbs (unless you put it inside a sandwich).  I try not to order it at a restaurant because I have a serious problem with mayonnaise.  Not only am I not crazy about the taste but it's filled with fat!  I know I'm not reinventing the wheel here, but I like to whip this up in a time pinch or for a packed lunch on the go.  So here is my quick and easy no mayo spicy chicken salad recipe.


What you will need:

- 1 can shredded chicken (feel free to use fresh chicken, this is my "quick" version)
- 1/4 onion diced
- 1 celery stalk diced
- 1 small tomato diced
- 1 jalapeno diced
- 1/4 to 1/2 cup Veganaise (or any soy based "mayo", both can be found at Whole Foods)
- 1 lemon
- salt and pepper to taste

Serves 2-4 people.

Add the all the ingredients (except the lemon, salt, and pepper) together in a bowl and mix together.  I add in the Veganaise one teaspoon at a time so I get the perfect consistency.  It all depends how saturated you like your salad to be.  I usually squeeze one half of the lemon into my chicken salad but I would recommend adding a little at a time to get your desired taste.  Same with the salt and pepper.  I am not a huge fan of salt but get a little crazy with the pepper!

If you haven't heard of or used Veganaise before, it's very much like mayo without the guilt.  I think it tastes better but I guess that depends on the person.  The addition of jalapeno in the salad really makes a world of difference, it gives it a crisp and spicy kick.  And feel free to try this recipe with tuna or salmon as well if you're pescetarian :)

  4. Um I love mayo too but I don't usually let myself have it. I actually love vegenaisse! Ethan hates it haha. This is so fun that you're sharing a recipe with us! I don't eat chicken but all those veggies look good! And I might even try it with salmon..

  7. I have never tried that veganaise before. I might have to give it a go. I am kind of addicted to mayo but I buy the fat reduced kind.

  8. Yay healthy recipes! I'm crazy about them, being a health freak. I've never heard of Veganaise though! Although I never use mayonnaise on anything so maybe that's why I never bothered searching for an alternative. But this is good to know about! Thanks!
